Here's my recipe: Southern Style Crab Cakes w/ Roasted Pepper chive Aioli Ingredients: 12 oz lump crab meat, drained (reserve liquid for later. May be used to make meat mix the right consistency or to extend mixture with extra bread crumbs if needed) � cup celery, finely diced � cup chives, minced (� cup for meat mix- � cup for chive aioli) � cup mayonnaise (� cup for meat mix- � cup for chive aioli) 1 large egg 2 tsp Dijon mustard � tsp hot sauce App. � cup plain bread crumbs. I live in the DC Metro area so I go to Baltimore a lot and the Eastern Shore so I know what good crab meat tastes like. This stuff beats any canned product out there, but live crab freshly picked is better. It is fantastic, and you can tell by the way it is wrapped up and well taken care of in the can. I would highly recommend this it makes for great crab dip and crab cakes. |
